Many graduates join us temporarily but then realise the career opportunities are many and varied, so stay with us to become managers or chefs; turning fill-in jobs into real careers.

Before joining Brasserie Bar Co, Yanni worked in five star hotels in Greece and for high profile Patron Chefs in central London restaurants. With us, he started as a Junior Sous Chef in The Jolly Farmer, bringing with him Mediterranean charm, warmth and creativity. His passion for excellence shines through every dish and has rightly earned him the Sous Chef role in The Hare - next stop Head Chef…..

The best part of my job is watching team members - across a real cross-section of roles - PROGRESS AND DEVELOP IN THEIR CAREERS; be that on the apprentice scheme or in various areas of training. I’m currently working closely with the chefs to build a suite of training materials which I hope will make life easier for new starters and more effective for the kitchens. It’s exciting. Kate Pearce, Learning and Development Manager
Kate started as an Assistant Manager in Chancery Lane before progressing to General Manager of one of our busiest City brasseries in Threadneedle Street. From there it was a natural progression to become Operations Manager for the London region. After a short break to start a family, Kate came back to join the Head Office team bringing her wealth of operational experience to the Learning and Development team.

Sasha, Server at The King’s Head
Sasha works as a server in the Kings Head pub in Teddington. Initially intending to this to be a short term role, she loved it here so much that two years later she is not only still with us, but has since brought her brother, Phil on board too. Famed for their infectious smiles and instantly recognisable as the faces of many of our recruitment campaigns, both Sasha and Phil understand true hospitality and live our values every day.

I would say that whilst I have grown up through the ranks and been given many opportunities to learn, there are a few people who have influenced my professional development and personal growth. The ONE-TO-ONE GUIDANCE HAS KEPT ME MOTIVATED AND FOCUSED. After having completed her degree in economics, Viv decided that the very best senior managers are the ones that work their way upwards, getting a full understanding of all roles on the way. So, she started as a waitress in our Charlotte Street brasserie, progressed to General Manager, where she excelled, and has recently proved her point with her recent appointment as Operations Manager.
